Wisconsin’s cheese makers are finding a growth market in specialty cheese.
The USDA says Wisconsin’s specialty cheese output jumped 26-percent in 2022. Specialty cheeses include things like Feta, Gorgonzola, and Parmesan. Producers added almost 51-million pounds of specialty cheeses to Wisconsin’s haul last year. The USDA says Wisconsin accounts for 25-percent of all of the cheese made in the United States.
