There’s a lot of love for colby cheese at the Wisconsin Capitol, but there’s also a lot of love for all of Wisconsin’s other cheeses.
And that’s the problem. Lawmakers listened to the push to name colby as Wisconsin’s official state cheese yesterday. Colby was first made in Colby, Wisconsin and state Senator Kathy Bernier says it put Wisconsin on the map. But other lawmakers say there are other Wisconsin cheeses that helped make the state America’s dairyland. They say it wouldn’t be fair to single-out just one.
