A measure to name Colby as the Wisconsin official state cheese is gathering momentum in the state senate.
Senate Bill 371 was approved at the committee level with bipartisan support in yesterday’s vote. If approved, the measure would establish Colby cheese as Wisconsin’s state cheese. Colby cheese was first developed by Joseph Steinwand in 1885 in the town of Colby.
The measure still must have full state senate and state assembly approval as well as Governor Tony Evers’ signature.
